Carrot Banana Muffins


i've been trying out some new recipes recently. this one is easy to put together and is both delicious and nutritious. definitely a keeper!


Carrot Banana Muffins

ingredients
• 2 cups almond flour(i used oat flour because that's what i had)
• 2 teaspoons baking soda
• 1 teaspoon sea salt
• 1 tablespoon cinnamon
• 1 teaspoon ginger
• 1/2 teaspoon nutmeg (next time, i'll add a little more. yum!)
• 1 cup dates, pitted
• 3 ripe bananas (small)
• 3 eggs (organic and free-range preferred)
• 1 teaspoon apple cider vinegar
• 1/4 cup coconut oil , melted
splash of vanilla (i added, everything's better with vanilla!)
• 1 1/2 cups carrots, shredded
• 1 cup walnuts or pecans, chopped

directions
Preheat the oven to 350 F. In a large bowl, combine almond flour, baking soda, salt, cinnamon, ginger and nutmeg. In a food processor, combine dates, bananas, eggs, vinegar and oil.Transfer mixture from food processor into the large bowl with dry ingredients, blend until thoroughly combined. Fold in carrots and nuts. Spoon mixture into paper lined cupcake pan and bake for 25–30 minutes.
